Eric Martel took his first footballing steps with RSV Ittling and was in the SSV Jahn Regensburg academy until 2017. He then made his way to Leipzig, where he earned his first stripes as a German youth international. In September 2020, Martel made his debut for the under-19s. Two months later, the 18-year-old made his debut for the first-team as Julian Nagelsmann brought him on against FC Augsburg in the 2020-21 DFB-Pokal.
In January 2021, Martel was loaned out to Austria Wien. For the Austrian capital club, he made 55 appearances before joining 1. FC Köln for the 2022-23 season.
